Recipe by Chef Cathy Zeis

Ingredients:

*Makes 4 sandwiches

1 large cucumber, peeled and cubed, about 1/4" thick
1 large hot house tomato, sliced thin
1-8 oz. carton whipped cream cheese
1/4 cup green onions, sliced, about 1/4"
1/4 tsp. garlic powder
1/4 tsp. cayenne pepper
8 slices whole wheat bread, crust removed
fresh red grapes for side

Directions:

In a small bowl, mix cream cheese with green onions, cucumbers, and spices. Stir to incorporate. Spread mixture onto a slice of bread and top with a thin slice of tomato. Cut the bread in squares and serve with fresh red grapes. Perfect for a hot summer day!
