Foodie Friday: Cheesy Caramelized Onion and Bacon Dip & Bacon Jalapeno Deviled Eggs

SHERMAN, TX-- A Gourmet Waffle Shop and Catering stops by for Foodie Friday and helps us make 2 great appetizers featuring bacon!

Cheesy Caramelized Onion and Bacon Dip

2 (8 oz) packages cream cheese, softened
2 cups shredded cheese
1/2 cup sour cream
1/2 cup mayonnaise
10 slices bacon, cooked and crumbled

1. Preheat oven to 350 degrees. Spray a 2 Qt. baking dish with nonstick cooking spray.
2. In a large bowl, beat cream cheese and next 3 ingredients at medium speed with a mixer until combined. Stir in crumbled bacon and Caramelized Onion. Spoon mixture into prepared pan, and sprinkle with Crunchy Topping.
3. Bake for 30 minutes or until hot and bubbly.

Caramelized Onion
1/4 cup butter
3 large onions, thinly sliced
1 tbsp balsamic vinegar
1/2 tsp ground black pepper
1/4 tsp salt

1. In a large skillet, melt butter over medium-low heat. Add onions, cover and cook for 40 minutes stirring occasionally.
2. Increase heat to medium-high. Uncover and cook, stirring frequently, until onions are caramel colored, 10 to 15 minutes. Remove from heat, stir in vinegar, pepper and salt. Use immediately, or let cool, cover and refrigerate for up to 3 days.

Crunchy Topping
3/4 cup crushed buttery round crackers (about 15)
2 tbsp shredded Parmesan cheese
1 tbsp chopped fresh parsley
1 slice bacon, cooked and crumbled


Bacon Jalapeno Deviled Eggs

12 large eggs, hard boiled and peeled
1 cup mayonnaise
1 1/2 tsp rice vinegar
3/4 tsp dry mustard
1/2 tsp sugar
2 jalapenos, seeded and chopped
6 pieces bacon, cooked, crisp and crumbled

Slice the hard boiled eggs in half, lengthwise.
Remove the yolks and put them in a mixing bowl
Mash the egg yolks and with a fork
Add the mayonnaise, rice vinegar, dry mustard, and sugar to the mashed egg yolks and stir until well combined.
Mix in the jalapenos and bacon
Put the mixture in a ziploc bag and cut a small hole in the corner of the bag
Fill each egg hole with the mixture
Sprinkle with paprika
Chill until ready to serve
