Foodie Friday: Pumpkin Bars from the Gourmet Waffle Shop & Cafe

SHERMAN, TX-- A perfect Fall treat that won't keep you tied up in the kitchen too long.

Pumpkin Bars
4 eggs
2 cups sugar
1 can of Pure Pumpkin or 15 oz of real pumpkin
1 1/2 butter sticks melted
Mix all the above together

2 cups flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground ginger
Mix all the dry ingredients together

Then gradually mix dry ingredients with the wet.

Preheat oven to 350 degrees, spray a pan 10 x 15 and spread the pumpkin bars evenly. Bake for 30 min or until inserted toothpick comes out clean. Let cool before icing.

Cream Cheese Icing
6 oz cream cheese softened
9 tbsp butter
1 1/2 tsp vanilla
4 cups powdered sugar
3 tbsp milk

Mix cream cheese and butter until smooth, add vanilla. Add powder sugar 1 cup at a time and 1 tbsp of milk at a time until desired consistency. Spread on cool pumpkin bars and Enjoy!
