Foodie Friday: Icebox Pie and Pineapple Cooler

SHERMAN, TX-- Just in time for summer, here's a refreshing dessert and punch recipe from our friends at the Gourmet Waffle Shop in Denison.

Easy Icebox Lemon Pie

1 Box Nilla wafers
4-5 Lemons
2 Cans Eagle Brand Milk
1 Small Tub of Cool Whip

1. In a food processor crush the mills wafers leave some whole for the sides of pie dish.
2. Put the crushed wafers in the bottom of pie dish. Put the whole wafers around the dish. The wafers will stick to the fillings.
3. Set pie crust aside.
4. Squeeze lemons into a medium bowl. Make sure there is no seeds in the juice. Pour 2 cans Eagle Brand milk into the lemon juice. Stir. Then add the small tub of cool whip. Stir till all blended well.
5. Pour filling in pie dish and refrigerate for 2 or more hours .
6. Enjoy!

Pineapple Cooler

6 oz concentrated Limeade (thawed)
12 oz concentrated Pineapple Juice (thawed)
4 cups of Cold Water
1 liter Ginger Ale
Ice Cubes
Add fresh strawberries and pineapple
Serve cold!
