6 Roma Tomatoes 3 tbsp olive oil 2 tbsp chopped garlic 2 tsp black pepper 2 tsp salt 5 to 6 leaves of chopped basil 2 pieces of foccacia or hard crusted bread
Dice all tomatoes, in a medium mixing bowl mix all other ingredients except bread. Mix well and place in refrigerator, heat a griddle pan over medium high heat and drizzle with olive oil. Slice bread into half inch sized slices and toast on griddle 2 to 3 min on each side.
There are 2 ways to serve bruschetta, if you plan to eat it immediatly you can spoon small servings on to the toasted bread pieces on a plate, if you plan on serving as a party favor put the tomatoes mix in a medium bowl and fan bread out on plate next to bruschetta. Serve with fresh mozzarella and balsamic for a delicious twist.
