Cajun Fried Catfish with Spicy Coleslaw and Jalapeno Tartar Sauce

4 Catfish Filets cut in half
2 cups flour
1/2 cup cajun seasoning
1 tbsp season salt
1tbsp garlic powder
1 tsp chili powder
1 tbsp black pepper

Spicy Coleslaw

4 cups Coleslaw Mix or any chopped cabbage
1/2 cup mayonnaise
2 tsp canned chipotle sauce
1 tbsp sour cream
1 tsp salt
1 tbsp pico de gallo

Jalapeno Tartar Sauce

1 cup Mayonnaise
1 roasted and chopped jalapeno
2 tsp chopped onion
1 tsp lime juice
1 pinch cumin
1 pinch chili powder
salt and pepper taste

In a counter top fryer or on the stove top, heat canola oil to 350
degrees. While oil heats combine flour, cajun seasoning, chili powder, garlic, season, and black pepper and dip catfish filets until completely coated. Once oil reaches temperature add half of the fish and fry for 4-7 min depending on size and thickness. While fish cooks combine mayonnaise, salt, chipotle, sour cream and mix well. Add mayonnaise and pico de gallo to cabbage and thoroughly mix and place in refrigerator. Remove fish and drain oil and fry other batch of fish. Combine all remaining ingredients for tartar sauce and place in refrigerator. Serve with fries and hushpuppies.
