Cooking with Cathy: Healthy Chic & Rice

*Serves 2

2 boneless, skinless chicken breast, cubed, about 2" a piece
1-8.5 oz. bag Whole Grain Medley Brown & Wild Rice
1-6 oz. can diced tomatoes
1 cup black olives, drained
4 Baby Bella mushrooms, sliced
2 TBS. extra virgin olive oil
Zeis Spice:
1/4 tsp. garlic powder
1/4 tsp. lemon pepper
1/4 tsp. cayenne pepper

Cook rice according to directions and set aside. In a large skillet over medium-high heat, cook chicken with spices for 5 minutes, stirring occasionally. Add sliced mushrooms and cook for another 2 minutes. Add black olives and diced tomatoes. Stir to incorporate. Simmer for 3 minutes. Pour rice onto a serving platter and top rice with chicken mixture. Serve hot. Perfect with a fresh spinach salad.
