Cooking with Cathy: Grilled Cod a la Florentine

2 fresh Cod fillets
16 oz. chopped spinach
1/2 cup red pepper, chopped
1/2 cup red onion, chopped
1/4 cup sliced almonds
1 tsp. lime juice
4 TBS. extra virgin olive oil, divided
Zeis Spice:
1/2 tsp. cayenne pepper, divided
1/2 tsp. lemon pepper, divided
1/2 tsp. garlic powder, divided

In a large skillet over medium-high heat, grill Cod in 2 TBS. oil. Season each fillet with spices, one side only. Cook Cod for 3 to 4 minutes per side, turning once. Cod is done when the sides start to flake. After turning the fish, top with lime juice. In another large skillet over medium-high heat, saute pepper and onion in 2 TBS. oil. Cook for 1 minute then add spinach and almonds. Stir occasionally for 4 to 5 minutes. Spoon spinach mixture onto a serving platter and top with Cod. The perfect side is sliced apples. Healthy and so yummy!
