Cooking With Cathy: Super Bowl Soup!

2 lbs. smoked turkey, sliced 1/2" thick, cubed
8 cups all natural chicken broth
1 cup carrots, sliced
1 cup celery, sliced
1 small onion, diced
1-8.5 oz. can diced tomatoes with juice
1-8.5 oz. can kidney beans with juice
1 package 90 second brown rice, cooked
2 TBS. extra virgin olive oil
2 tsp. ground cumin
2 tsp. garlic powder


In a large pan over medium heat, saute turkey, carrots, celery, and onion in oil for 2 minutes, stirring occasionally. Add all other ingredients and stir to incorporate. Simmer uncovered for 30 minutes, stirring often. Serve hot. *For an added touch, add shredded cheese and crumbled chips. YUM!
