2 lbs. extra lean hamburger meat
1 small onion, diced
1-6 oz. can chopped green chilies
32 oz. beef broth
2 cups frozen vegetable mix (broccoli, cauliflower, and carrots)
2 cups frozen green beans
1-16 oz. jar Chef Cathy's Chunky Corn Salsa
4 TBS. extra virgin olive oil
1 tsp. garlic powder
1 tsp. lemon pepper
1 tsp. cayenne pepper
In a large pan over medium-high heat, cook hamburger meat in oil with spices and onion. Stir occasionally. Once meat is done, add green chilies and Chef Cathy's Chunky Corn Salsa. Stir to incorporate. Add beef broth and all other vegetables. Stir and lower heat. Simmer for 10 to 15 minutes. Serve hot!
