Cooking with Cathy: Stir Fry Pork

4 boneless pork chops, about 1-1/2" thick
1 package frozen all natural stir fry vegetables
1 medium red pepper, sliced
4 TBS. extra virgin olive oil
1 tsp. garlic powder
1 tsp. ground ginger

Slice pork chops into bite size pieces and cook in hot oil and spices over medium heat, stirring occasionally. Cook for 5 minutes then add pepper slices and stir fry vegetables. Stir to incorporate and lower heat. Simmer for 5 minutes. Serve hot with salad or wild rice.
