1-6-7 lb. super chicken from Dominion Farms
1-14 oz. bottle Sun Dried Tomato Vinaigrette with Roasted Red Peppers
1-6 oz. jar marinated artichokes
6 sprigs fresh rosemary
1 bunch Italian parsley, for garnish
1-lb. fresh cherries, for garnish
* The secret to cooking all natural is SLOW and LOW! Don't get in a hurry or the chicken won't be moist.
Rinse thawed super chicken with cold water. Pat dry. Place chicken in a deep roasting pan, breast side up. Pour marinated artichokes with juice into the cavity. Add fresh rosemary into the cavity. Pour the Sun Dried Tomato Vinaigrette all over the chicken, covering completely. Place chicken, uncovered, into a 275 degree oven. Cook uncovered for 3 hours. Cover the chicken with foil and cook another hour to 2 hours. Chicken is ready when juices run clear. Let chicken rest 5 minutes before cutting. Enjoy and Merry Christmas!
