Hot-Sweet Grilled Salmon

Grilled Salmon with Hot-Sweet Wine Sauce
with Red lettuce & Spinach salad

*Serves 2

2-4 oz. Salmon fillets
1 carton fresh blackberries
1/2 cup red delicious apple, cubed
1 large fresh jalapeno, seeds removed, diced
1 package red lettuce & spinach salad mix
1/2 cup crumbled tomato-basil Feta cheese
1/2 cup chopped walnuts
1 cup all natural Balsamic dressing
1/4 cup white wine
3 TBS. extra virgin olive oil, divided
Zeis Spice:
1 tsp. garlic powder, divided
1 tsp. lemon pepper, divided
1 tsp. cayenne pepper, divided

In a large skillet over medium-high heat, grill salmon fillets in 2 TBS. of extra virgin olive oil. Season each fillet with spices. Use 1/2 tsp. of spices per fillet. Grill 3 to 4 minutes per side, turning once. In a small skillet over medium-high heat, saute blackberries, apple, and jalapeno in 1 TBS. extra virgin olive oil. Add white wine after 1 minute and simmer for 4 minutes, stirring occasionally. In a medium salad bowl, add dressing. Pour salad mixture, Feta, and walnuts into bowl. Toss and place on side of a plate. Place 1 Salmon fillet on each plate and spoon sauce on top of each fillet. Serve warm.
