Breakfast Casserole Made Easy

4 all natural eggs/organic eggs
1/2 pint heavy whipping cream
1/4 cup green pepper, diced
1/4 cup red pepper, diced
1/4 cup mushrooms, sliced
1/4 cup onion, diced
1/4 cup carrots, shredded
1/4 cup cheddar cheese, shredded
2 sausage patties, cubed
5 pieces cooked bacon, crumbled
1 TBS. extra virgin olive oil
Zeis Spice:
1/4 tsp. garlic powder
1/4 tsp. lemon pepper
1/4 tsp. cayenne pepper
1 jar Chef Cathy's Awesome Salsa
fresh strawberries and red grapes for garnish

In a large bowl, mix eggs with cream and spices. Set aside. In a large skillet over medium-high heat, saute all other ingredients except cheese in oil. Cook for 5 minutes, stirring occasionally. Spray a baking dish with cooking spray. Add skillet mixture. Slowly pour in egg mixture into the pan. Stir to incorporate. Add cheese and stir again. Cook, uncovered, at 350 for 30 to 40 minutes or until golden brown. Serve with fresh strawberries and red grapes. Top casserole with Chef Cathy's Awesome Salsa.
