Prepare Ahead for Crazy Nights!
For meet the teacher night, or any other night that not everyone will be at the table the same time. Quickly prepare cornbread if you prefer instead of rice and you have the traditional southern comforting meal for the family. For a lower fat version, use cubed sandwich ham, or Canadian Bacon.

Hoppin' John Black Eyed Peas
Makes 6 Servings
1 cup black-eyed peas -- frozen or fresh
4 slices thick-sliced bacon -- cut in 1/2 inch pieces
1 cup onion -- cut in 1/2 inch dice
1/2 cup bell pepper -- cut in 1/2 inch dice
2 serrano peppers -- cut in 1/8 inch slices
1 garlic clove -- minced
2 cups chicken broth
1 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 bay leaf
3 cups cooked rice
1. If using dried black eyes, add to boiling water, and set aside about an hour. If frozen, add boiling water and set aside just while browning vegetables. Drain and rinse.
2. Lightly fry bacon in a 2 quart saucepan until browned. Add onion, bell pepper, serrano and garlic. Saute until onion is tender.
3. Add peas, 2 cups chicken broth, spices and bay leaf. Cover and simmer 40 to 50 minutes, or until peas are tender. This may take only 20 minutes with fresh black-eyed peas.
4. Remove bay leaf and stir in rice. Simmer 10 more minutes until liquid has been absorbed.
