Fit in 8 weeks with Chef Cathy: Baby Bella Mushroom Eggs

Baby Bella Mushroom Eggs: All Natural Egg Whites...Yea! Two eggs are your limit here. And yes…you get some cheese this morning! Keep with the theme and buy the all natural or Organic white Cheddar Cheese...please!

1-cup all natural egg whites

1 TBS. diced mushrooms, Baby Bella

1 tsp. Organic cheese, White Cheddar

Zeis Spice
1/8 tsp. Garlic powder
1/8 tsp. lemon pepper
1/8 tsp. cayenne pepper
2 TBS. fresh strawberries, about 4 large, sliced

Spray a small skillet with cooking spray. Over medium-high heat, saute mushrooms for 3 minutes. Pour in egg whites and stir to incorporate. Add spices. Using a spatula, stir eggs. Slowly move the pan back and forth. Use the spatula to keep the egg mixture off the side of the pan. Cook for 5 minutes or until eggs are done. Just before removing the eggs, spread the cheese across the middle. Using a spatula, fold the eggs in half and slid onto a serving dish. Serve with fresh strawberries.
