Cooking with Karel Anne: Quick Apple Pancakes

Should I have it for breakfast? Or should I have it for dessert? Imagine that you can do both!

This simple recipe is from the Kids Collection chapter of my book. This is so easy, that a child can make it with only a little help from an adult, to make breakfast almost on their own.

Quick Apple Pancakes

Makes 6 Servings

1/4 cup unsalted butter -- melted, (1/2 stick)
1/2 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
4 apples -- peel, thinly sliced

1 package pancake mix, complete -- (approx. 6 ounces)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup water
1 teaspoon vanilla
2 Tablespoons sugar
1/2 teaspoon cinnamon

1. Stir together the melted butter, sugar, cinnamon and nutmeg. Layer the apples in a 9-inch glass pie plate. Pour the butter mixture over the apples to coat. Cover with wax paper and microwave on high for 3 to 4 minutes or until apples are tender.

2. In medium bowl, blend all batter ingredients: pancake mix, cinnamon, nutmeg, water, and vanilla. Pour evenly over cooked apples.

4. In small bowl, combine the sugar and cinnamon with a fork; sprinkle over batter. Microwave on high for 3 to 5 minutes or until a toothpick inserted 2 inches from the edge comes out clean. Let stand for 5 minutes.

5. Cut into wedges. Flip wedges upside down on the plate when serving.
