Catfish with white wine butter sauce
1tsp olive oil
chopped garlic 1 tsp
chopped shallots 1/2 cup
bottle of wine -dry 1 bottle
lemons fresh squeezed 2
tabassco 1 tbsp
white pepper 1 tsp plus 1/4
heavy cream -1 cup
whole butter diced- 1 stick
Get a pot at medium heat, add garlic to golden brown and add shallots. Saute for 30 seconds.
Add White wine and lemon jucie. Add all ingredients except heavy cream and butter.
Let reduce to a syrup and then add heavy cream
Let reduce to a thickened sauce and then add butter
use a wire whip to dissolve the butter and remove from the fire for 30 seconds and put it back on the fire to let it come to a boil. use a strainer when it is done.
Fry then bake your catfish and serve with mashed potatoes.
