Twice Baked New Potatoes (Spiders)
Party Recipe
3 lb New Potatoes: washed, rub with olive oil
1/3 cup Cream Cheese
1/3 cup Sour Cream
1 lb Chopped and browned bacon
1 lb shredded pepper jack cheese
1 bag of pretzels (regular size)
1 Stick melted butter
2 tbsp chopped garlic
1 tbsp dried basil
Salt and pepper to taste
Preheat oven to 350 degrees and baked potatoes for 1 hour to 1 ¼ hours until fork tender. Let stand till cool enough to handle. Cut in half and carefully scoop out the inside; making sure not to tear the skin. Add the inside to a bowl and mash with cheeses, a ¼ of the bacon, basil, salt and pepper. Once it is like mash potatoes, scoop bake into potato skins. In a food processor combine 1/2 pretzels and the rest of the bacon, blend until like bread crumbs. Mix pretzel mixture with melted butter and garlic and combine till completely moist. Top potatoes with topping and bake at 350 for 15 to 20 min.
To decorate like spiders use the remaining pretzels and break them in the small leg shaped pieces. Place four legs on each side of the potatoes, you can also add to small fangs to the front for better effect.
