My daughter is about to leave for New York to return to college, and her southern roots are screaming for a really good vegetarian black-eyed pea recipe to take with her. I developed this one, both vegetarian and gluten-free. The mushrooms and the hickory smoked salt give the beef/ham flavor we were missing, and she was all smiles with a big spoonful.
