Cooking with Karel Anne:Party Spaghetti Meatballs

We’re having a party! We are having a BALL!! For a traditional meatball, this one has real flavor, can be made ahead, and how easy is a spaghetti dinner? Add a green salad with a fruit dessert, and you have a nutrition packed meal that’s really GOOD!
Party Spaghetti Meatballs

2 slices white bread

1 /3 cup buttermilk

1 egg yolk

3 /4 pound ground beef (80-85% lean)

1 /4 pound ground pork (not sausage)

1 /4 cup parmesan cheese

1 teaspoon dried oregano

2 cloves minced garlic

1 /4 teaspoon each salt and pepper

Vegetable oil

1. Remove the crust from the bread, tear into pieces, and place in a shallow bowl. Gently pour the buttermilk over the bread. Using a fork, mash and tear the bread apart until it looks like a smooth paste. Stir in the egg yolk.

2. In a large bowl, add the bread paste, beef, pork, parmesan, oregano and garlic. Using plastic gloves, blend the mixture until all ingredients are combined. Take about 3 tablespoons of meat and roll into a ball. Set aside and continue to make 12 meatballs.

3. Pour oil into a skillet until it is just under 1 /4 inch deep. Gently add meatballs in one layer. Cook for about ten minutes, turning to brown all sides. Transfer the meat to a paper towel lined plate, and discard the oil.

4. Pour the spaghetti sauce into the pan, and stir to incorporate the little brown bits from the meat. Add the meatballs and stir gently. Serve over pasta.

Optional change for step 1: 1 /4 cup old-fashioned oats, 1 /4 cup buttermilk, 1 whole egg. This creates a meatball that is softer and not crispy on the edges.
