Overnight Orange French Toast with Orange Sauce
Yield: 4 servings.
8 (3/4 inch thick) slices French bread
4 large eggs
1 cup milk
2 tablespoons fresh orange juice
1/2 teaspoon vanilla extract
1/8 teaspoon salt
2 tablespoons butter or margarine
Place bread in an ungreased 13 x 9 inch baking dish. Combine eggs and next 4 ingredients; beat well. Pour mixture over bread slices; turn slices over to coat evenly. Cover and chill overnight.
The next day melt 1 tablespoon butter in a large skillet over medium heat; remove 4 slices bread from dish, and cook 4 min. on each side or until lightly browned. Repeat with remaining butter and bread slices. Sprinkle toast with powdered sugar; serve immediately with orange sauce.
1 cup firmly packed brown sugar
2 teaspoons grated orange rind
1/2 cup fresh orange juice
Combine all ingredients in saucepan, stirring well. Bring to a boil; reduce heat, and simmer until thickened (about 5 minutes), stirring often. Makes 1 1/4 cups
