Warm Chinese Chicken Salad
Andie Boedeker joins us for one of her favorite recipes. This simple yet healthy and hearty salad is one you're sure to enjoy.

Warm Chinese Chicken Salad
4 Cups shredded Romaine lettuce
2 Cups shredded Chinese cabbage
1/2 cup walnuts toasted on cookie sheet at 350 for 10 min.
1 cup red or green grapes cut in half
2 cups diced cooked chicken

Dressing:
1 Tablespoon creamy peanut butter
l teaspoon dark sesame oil (found in the Asian section of your grocery store)
1/2 cup lime juice (fresh squeezed about 4 limes)
6 T. Soy sauce
2 teaspoons grated fresh ginger
2 teaspoons sugar
1/2 teaspoon chili paste (Asian section)
Whisk together peanut butter and sesame oil in salad bowl. Whisk in lime juice and stir until completely combines. Add soy sauce, ginger, sugar and chili paste.

Place chicken in small sauce pan and add salad dressing. Heat over medium heat until the dressing begins to caramelize. On each of four plates place romaine, cabbage, walnuts and grapes. Lace lightly with dressing. Place warm chicken on top. Serves 4. Enjoy!!!
