Breakfast Burrito for Kids on the Go!

*Recipe makes 1 large burrito.

1 garden vegetable flour tortilla
2 eggs
1/2 cup mushrooms, sliced
2 strips bacon, chopped
1/2 cup shredded cheddar cheese
1/4 cup heavy whipping cream

Spray a small pan with cooking spray. In a small bowl, mix eggs with cream. Whisk thoroughly. Set aside. Over medium heat, saute bacon and mushrooms in the pan for 2 to 3 minutes, stirring occasionally. Add egg mixture and cook for 3 to 5 minutes, stirring occasionally. Sprinkle cheese into the flour tortilla. Pour cooked eggs over the cheese and roll tortilla. Serve warm or wrap with plastic wrap and refrigerate. To reheat, place wrapped burrito in the microwave for 45 seconds.
