Bacon and Tomato Quiche

INGREDIENTS:

1/2 cup cheddar cheese
1/2 cup Monterey jack cheese
3/4 Cup diced cooked bacon
1/2 cup diced tomato
3 eggs beaten
1 cup light or heavy cream
salt and pepper
1 tomato sliced into 5 slices
1 unbaked pie crust

DIRECTIONS:

Preheat oven to 350 degrees. Sprinkle bacon, diced tomato, and cheeses on pie crust. Beat egg add cream, salt and pepper. Pour over cheese mixture in crust. Arrange tomato slices on top. Bake 30-40 min. until lightly browned on top and set.
