It is finally Halloween and Chef Karel Anne Tiezen is showing us how to make some delicious treats.
Prepare a standard sugar cookie recipe, or a mix, plus 2 Tablespoons flour.
Roll about a tablespoon of dough into a long thin cylinder to resemble a finger. Using your own knuckle, make an indention about halfway down the cookie. Bake as directed.
1 /2 cup confectioner’s sugar + 1 tsp water,
adding more water by drops until it is a thick smooth mixture
1 tube red gel icing
When cookies are cool, paint the fingernail with the white sugar mixture and add red gel blood to the cracks in the cookie to appear as scars or wounds.
Using a refrigerated can of bread sticks, cut each in half and lay flat on a baking sheet.
Cut 4-5 pepperoni rounds into six pie shaped pieces.
Using one whisked egg white, brush the bread sticks and place the pepperoni like a fingernail on one end. Bake according to package directions.
Serve with thick marsala sauce or spaghetti sauce. Arrange fingers around the sauce.
Bat Cake & Scary Spiders
Prepare one box of regular cake mix. Pour six cupcakes, and pour the remaining batter into a 9-inch or 10-inch round pan. Bake as directed.
When the cake has cooled, remove from the pan. Using the pattern that follows, cut the cake into pieces. Place each piece on a separate cut section of parchment paper.
Prepare a tall glass of very hot water. Take a little more than a tablespoon of whipped icing from the container, dip quickly in the hot water, and begin to ice the pieces. Each time you get more icing, dip briefly in the hot water to ease application of the cut pieces.
Yellow icing works best for the moon, while black, or chocolate works best for the bat.
White icing is used for the mouth and fangs, while small red candies are used for the eyes. Allow the pieces to dry, or place in the freezer for more than 2 hours.
Prepare a 21” long tray for the assembled cake. Place the body in the center of the tray. Secure the ears. Gently place the wings and add very little icing to secure them to the body. Serve with a wicked smile.
Gently shave the tops off the cupcakes and place them face down on parchment paper. Ice the cupcakes in the same manner as the bat cake with the hot water dips. When ready to place on the serving tray, cut string licorice into 2 inch lengths for the legs of the spider. Place under the edges of the cupcake. Using white icing, or red candies, create the eyes for creepy followers.
