Holiday Cooking Competition Finals-Josh Aaron

Finalist number two four our healthy holiday cooking competition is Josh Aaron with the Island Bar and Grill at Highport Marina. He is making a delicious Cornish Game Hen al Mattone.

Cornish Game Hen al Mattone

2 tbs olive oil
1 tbs lemon juice
1 tsp salt
1 tsp black pepper
1 tsp crushed red peppers
1 sprig of chopped fresh rosemary
1 Cornish Game Hen (backbone removed)

Combine all ingredients in small bowl and mix well.
Using kitchen scissors remove the back bone of the hen. Cover the hen with
the seasoning mix and let marinade over night.
Pre heat the oven to 400 and place a tablespoon of olive oil in an oven
safe frying pan and heat over medium heat. Place hen skin side down on hot
pan for about 5 mins, do not turn. Place a brick covered in foil or a
heavy frying pan on hen. Bake for about 15 min,then turn and another bake
for another 10 min.

Rosemary Garlic New Potatoes

5 to 10 Red new potatoes
2 sprig of fresh Rosemary (chopped)
3 cloves chopped Garlic
2 tbsp olive oil

Cut potatoes in halves or quarters depending on size, then blanch in
boiling water just until tender, about 5 min.
Drain potatoes then generously coat with oil, garlic and rosemary. Bake at
400 for 20 mins or until golden brown.

Lemon-Roasted Green Beans Almandine

1 lb fresh green beans.
juice of 1 lemon
zest of 1 lemon
1 tsp black pepper
1 tsp salt
1 tablespoon chopped fresh oregano
1 onion wedged
1 tbsp olive oil
2 tbsp chopped almonds

Combine green beans, pepper, salt, oregano, onion, and oil and mix well.
Place on a oiled baking sheet and bake at 400 for about 10 mins. After 10
min turn the beans then cook them for about 10 more min. After they come
out toss them with lemon juice, lemon zest, and almonds.
