Cooking with Angie: Marinated Cheese and Tomato Tray

We are cooking with Chef Angie this morning! Today we are making a marinated cheese and tomato tray, a great appetizer for Christmas Eve, New Years or any celebration.

Marinated fresh mozzarella, cheddar and tomatoes
2 T. red wine vinegar
1 clove garlic, minced
1/2 t. salt
1/4 t. dry mustard
Generous dash freshly ground black pepper
1/3 cup olive oil
4 fresh red tomatoes, Italian plum tomatoes, or romas
8-10 basil leaves
6 oz. fresh mozzarella, sliced
6 oz. sliced cheddar
Olives: 3/4 cup of a combination of green, kalamata, black
Combine 1st 6 ingredients. Mix well. Pour over olives. Arrange a tomato slice, cheddar slice, mozzarella slice, standing slightly up place on a cheese board or plate. Continue to line up your tomatoes, cheeses in that order. Drizzle marinade over tomatoes. Cover and refrigerate until ready to eat or up to 8 hours. Serve with toasts or crackers.
