Today we are cooking with Chef Angie Boedeker. We are making pan seared fish with strawberry salsa. It is very light a refreshing, especially for those looking to lose weight.
Pan seared Fish
4 (6 oz.) white fish filets (tilapia, orange roughy work well)
1/2 cup flour
salt and pepper to taste
3 T. olive oil
rinse fish filets under cold water and pat dry with paper towel. Place flour in shallow dish and season with salt and pepper. Heat olive oil in small skillet over medium heat. Lightly dust filet in flour and cook 3 min. per side in skillet or until fish flakes. Place on serving plate and top with strawberry salsa.
1 pint fresh strawberries, stemmed and halved
1/4 cup fresh cilantro stems removed and chopped
1/4 cup chopped red onion
1 fresh jalapeno seeded and minced
juice of one lime
3 T. honey
1/2 t. cumin
Mix all together. Refrigerate until ready to serve.
