Cooking with Josh: Eggplant

We are cooking with our healthy holiday contest winner Josh Aaron from the Island Bar and Grill at Highport Marina. Today we are making an eggplant recipe that vegetarians are sure to love!

Take fresh eggplant and cut it, put olive all over pieces and place on a grill with ground black pepper and salt.

For salsa
1 container grape tomatoes
2 stalks chopped celery
1/2 chopped onion
2tbs capers
1tbs chopped garlic
Pinch of salt and black pepper
1tbsp olive oil
3 tbsp red wine vinegar

Mix all together, serve.
