Super Bowl Muffuletta Sandwich

We are cooking with Chef Angie Boedeker from Angela's Cafe in Denison. Today we are making a sandwhich that will be great for your Super Bowl Party.

Muffuletta Sandwich
2/3 cup olive oil
1/2 cup chopped pimento stuffed green olives
1/2 cup chopped black olives
1/3 cup chopped fresh parsley
1 teaspoon dried oregano
1/2 t. pepper
2 t. lemon juice
1 t. minced garlic
1 (20 oz.) loaf of crusty French bread
1/4 pound sliced Genoa Salami
1/4 pound sliced provolone cheese
1/4 pound sliced ham
Combine first 8 ingredients, stirring well; cover and chill at least 2 hours. Cut bread loaf in half horizontally; scoop out some of bottom, leaving a 3/4 inch thick shell. Drain olive mixture, and spoon half of mixture onto bread shell. Top with salami, cheese, ham and remaining olive salad. Cover with bread top. Wrap loaf tightly with plastic wrap, and chill 6-8 hours. Cut into wedges or slices to serve.
