It is Fat Tuesday! The Iron Gate Cafe in Durant is cooking up a special pasta for the occasion. They are also hosting a Mardi Gras dinner this Saturday at the cafe. They are located at 305 West Main Street inside the plaza in Durant.
MARDI GRAS SEAFOOD PASTA
1 lb. sea shell pasta or pasta of choice
1 lb. link sausage, sliced
1 lb. crawfish tails, cleaned
1 lb. shrimp, shelled
1 can Rotel tomatoes
1 jar Ragu double cheddar cheese or any jar cheese or Velveeta
Cajun seasoning to taste
1 pint half and half
Boil pasta, drain, and set aside. Slice sausage and brown in one tablespoon of oil. Add cheese, half and half, Rotel and Cajun seasoning. Cook until all blended and hot. Add crawfish and shrimp and cook for 10-15 minutes. Add pasta to the seafood mixture and you are ready to serve with your favorite salad and bread.
