We continue our Fit in 8 weeks with 400 calorie lunches. Chef Cathy is here to show us how we can enjoy a delicious chili with lots of flavor.

390 Calorie Chili

*Recipe makes 2 servings!

1-lb lean ground beef (90/10)
1-6 oz. can tomato paste
1 TBS. extra virgin olive oil
1-1/2 cup water
3 TBS. chili powder
1 TBS. ground cumin
2 tsp. cayenne pepper
1 tsp. minced garlic
1 tsp. dried minced onion flakes
1 tsp. dried oregano
¼ tsp. coarse Sea Salt
1 TBS. green onion, diced
1 TBS. sharp cheddar cheese, shredded
1 TBS. jalapeno, sliced
1 TBS. fresh avocado, diced
1 tsp. Tabasco
Whole wheat or whole grain Melba toast (4 pieces)

In a medium sauce pan over medium-high heat, brown meat in extra virgin olive oil and minced garlic. Cook for 5 minutes, stirring occasionally. Add tomato paste and stir to incorporate. Add water and all spices. Stir to mix all spices into meat and reduce heat to low. Simmer for 30 minutes, stirring occasionally. Serve hot with garnish and toast.
