We are cooking up an omelet that is perfect for St. Patrick's Day! Josh Aaron from the Island Bar and Grill at Highport Marina joins us with this spicy recipe.
Chorizo and Pepper jack Omelet
2pc Ground Chorizo
Pico de gallo
pepper jack cheese
salt and pepper
Crack three eggs in bowl, add whipping cream, and salt and pepper. Pour into hot pan with oil. While omelet is cooking add chorizo, pico de gallo, and pepper jack cheese to middle. Then flip omelet.
4 fresh jalapeno
1 bunch cilantro
4 garlic cloves
Salt and Pepper
Add cilantro, 4 garlic cloves , 4 chopped jalapeno, salt and pepper, and a little lemon juice to a blender. Add olive oil as needed to blender.
When done add pesto on top of omelet and serve!
