Food Around the World: Cajun

We continue our series food around the world today we stop in Louisiana for delicious Cajun dishes. Today we are making dirty rice and jambalaya.

Rice Dressing or Dirty Rice

1 lb. Ground Beef or dressing meat (chopped giblets)
2-3 cups of cooked rice
chopped green onions
Cajun seasoning, black pepper and garlic powder to taste

Brown meat and onions. Do not drain. Add seasonings and rice and it's ready to serve. Can be served with any meat as a side dish or as a main dish.

Jambalaya

1 lb. Crawfish, Shrimp, Pork or any kind of meat
1 lb. Cajun Sausage, sliced in thin slices
2-3 cups cooked rice
chopped green onions
1/4 cup oil
2 T. Kitchen Bouquet
1 cup of water
Cajun Seasoning, garlic powder and black pepper to taste

Brown sausage and onions in oil. Add crawfish, Kitchen Bouquet, water and seasonings and cook for 10-15 minutes. Add rice and serve as a main or side dish.
