Food Around the World: New American Squash

We return back to the United States with a welcome homecoming with flavors from the garden. These two dishes show how we have changed the American diet. The original used the classic standby, canned Cream of Mushroom soup. The updated version is lighter, healthier, and has the full flavor of the vegetables. Enjoy!

Classic American Squash

Serving Size : 6

1 1/2 pounds yellow squash -- bite sized
1/2 pound Zucchini squash -- sliced 1/4" thick
1/2 cup onion -- chopped
1 can cream of mushroom soup
1 cup milk
2 1/2 cups Parmesan cheese
1/2 cup croutons, seasoned

1. Preheat oven to 350F.

2. Slice squash into bite size pieces and chop onions.

3. In a large baking dish, stir together the soup, milk and cheese. Add salt and pepper, as desired.

4. Add squash to dish and toss to coat. Place in preheated oven for 20 minutes.

5. Add croutons on top after first baking, and return to oven for an additional 10 minutes. Cool slightly before serving.

New American Squash

Serving Size : 6

1 1/2 pounds yellow squash -- bite sized
1/2 pound Zucchini squash -- sliced 1/4" thick
1/2 cup onion -- chopped
1 tablespoon garlic -- chopped
1 tablespoon olive oil
1/2 cup milk
1 tablespoon flour
2 cups mozzarella cheese
1 tablespoon fresh thyme

1. Slice squash into bite size pieces and chop onions.

2. In a large skillet, heat the oil, and saute the onions, squash and garlic. Add salt and pepper, as desired. Remove to a serving dish.

3. In a smaller skillet, pour the milk and heat to a low simmer. Sprinkle the flour over the milk and whisk quickly.

4. Slowly add handfuls of mozzarella cheese until all of it is incorporated. Stir in the fresh thyme and remove from heat.

5. Drizzle the cheese sauce over the squash and serve.
