Rock Lobster Rolls

Today we making a delicious dish that is refreshing and sure to have your friends coming back for more. Chef Christopher Tunnell the executive chef for the Choctaw Casino Resort stops by with the quick delicious recipe.

“Rock Lobster Roll”
• 3 tablespoons mayonnaise
• 1 stalk celery, finely chopped
• 1 tablespoon chopped scallion greens (about 1 scallion)
• 1 tablespoon cilantro leaf, finely chopped
• 1 tablespoon chopped fennel root
• 1 tablespoon fresh lemon juice
• 1 pound cooked rock lobster meat and cooked rock shrimp, cut into 1/3-inch pieces (2.5 cups)
• Salt and freshly ground black pepper
• 4 bite size pieces puff pastry for rolls
• 1 tablespoon extra-virgin olive oil
• Pinch granulated garlic
• Pinch Old Bay
• Dash Hot Sauce
In a bowl, stir together the mayonnaise, celery, scallion, cilantro, fennel and lemon juice. Fold in the lobster meat and season, to taste, with salt, pepper, garlic, old bay and hot sauce. Chill until ready to use. Just before serving, punch out the puff pastry into mini buns with a ½ inch round cookie cutter and brush the outside with olive oil. Place puff pastry into oven at 350 degrees until fully toasted. Cut into halves. Fill each with 1 heaping table spoon of the chilled rock lobster mixture and serve immediately.
