Beef Kabobs with Peppercorn Sauce
2 lbs beef round roast or tenderloin
1pkg grape tomatoes
1pkg baby bella mushroom (halved)
1 jar roasted red peppers (cubed)
Marinade/ season to taste
Starting with mushrooms, place meant and veggies on skewer rotating meat with veggies. Grill 4 or 5 minutes on each side.
1 cup heavy cream
2 tbs garlic butter
1tsp Madeira wine
1 tsp peppercorns (whole or cracked)
1tsp Dijon mustard
Melt butter over medium heat, add other ingredients and bring to a boil, turn down to slow simmer until thickened.
