It is birthday week on first news am! Today we are making a special grilled shrimp for Tom. Josh Aaron from the Island Bar and Grill at Highport Marina is here with a fresh dish you can do for the summer that family and friends are sure to enjoy.
Spicy Lime Grilled Shrimp
For inside grill, spray with olive oil and place shrimp skewers on grill.
Allow to cook on both sides for a few minutes until tail is pink.
11/2-2 cups lime juice
Let that come to a boil
1 cup Pineapple flavored tequila (alcohol cooks out)
Add cornstarch and water to help thicken
Let cool then add fresh cilantro
Serve over a bed of rice with skewers then pour mix over the top
