Avocado Chicken Salad
3 cups cooked chicken cut into bite sized pieces
2 cups cooked cold rice (1 cup uncooked)
3 avocados chopped and sprinkled with lemon juice
1/2 small minced onion
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup chopped celery (or almonds)
Mix all together. Chill. Serve with fruit and grilled toasts or crackers
