Apple Stuffing Stuffed Pork Chops

4 thick cut pork chops
salt and pepper

Apple Stuffing

1 box stove top stuffing mix
1/4 cup diced celery
1 Apple(Green or other sweet variety) chopped
4 tbsp melted butter
2 1 tsp dried sage
salt and pepper to taste

Apple Brandy Sauce

1 1/2 cups Apple Juice
1/2 cup Brandy
1 tsp Cinnamon
1/2 tsp nutmeg
1/4 tsp cayenne pepper
1 tbsp corn starch
1 tbsp water

Melt butter in saute pan and saute apples and celery until soft and add to
bread mix from stove top. Add the water and mix well, using a sharp filet
knife slice a long pocket along the none fat side of chop. Stuff the
pocket with the stuffing mix and place in hot skillet with olive oil. Turn
once after 3 to 4 min then place in 375 oven after next 3 to 4 min and
cook 5 more min or until internal temperature reaches 155. In a sauce pan
over medium high heat bring apple juice to a bowl, add brandy and
seasoning and bring back to a boil. Mix corn starch and water and whisk
into apple juice mix and whisk until sauce begins to thicken up, reduce
heat and let simmer until ready to serve. Top with Apple Brandy sauce and
serve with vegetable and mashed potatoes or rice.
