Cooking with Karel Anne: Grilled Pork and Apple Kabobs

By marinating overnight or early in the day, this meal is on your table in less than 15 minutes. It is delicious, colorful, and heavenly to smell the cinnamon and apples at the end of the grilling.No need to call everyone to the table. The aroma will bring them!
Grilled Pork and Apple Kabobs

Serving Size : 6

4 stalks celery

6 ounces unsweetened pineapple juice -- 1 single serving can

1 1/2 pounds pork loin, lean, boneless -- cut into 1" cubes

2 tablespoons vegetable oil

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 teaspoon ground nutmeg

dash ground allspice

6 ounces unsweetened pineapple juice -- 1 single serving can

2 Granny Smith apples -- cored, quartered, and cut in half crosswise

16 ounces French green beans, cooked

1/4 cup almonds, toasted -- sliced

1. Cut celery into 1-inch pieces. In a small saucepan cook celery, covered, in one can of pineapple juice for 3-5 minutes. Remove with a slotted spoon and refrigerate.

2. For marinade, in a small saucepan combine remaining pineapple juice, oil, cinnamon, salt, nutmeg, and allspice. Stir to blend well. Add additional can of pineapple juice and cook over medium heat for 10 minutes, stirring occasionally. Pour 1/4 cup of the marinade into a small bowl; reserve for apples.

3. Place cut pork in a shallow dish; pour remaining marinade over pork. Cover and place in the refrigerator for several hours or overnight, stirring occasionally.

4. Drain pork. On six 12-inch skewers thread pork cubes and celery, allowing space between cubes. Cut apples and place in reserved 1/4 cup marinade. Grill skewers over medium coals about 6-8 minutes, turning at least twice. Push cubes together; thread apple on skewers; grill an additional 2-3 minutes.

5. Place prepared French sliced green beans on the plate and sprinkle with almonds. Place one skewer diagonally across the green beans and serve.
