Cooking with Karel Anne: Oh My Gosh Ganache

We are cooking with Chef Karel Anne Tieszen this morning! We are kicking off the new year with oh my gosh Ganache!

Oh My Gosh Ganache
Serving Size : 12

1 1/2 cups heavy cream
1/3 cup light corn syrup
24 ounces bittersweet chocolate -- (65% or higher)
5 Tablespoons unsalted butter -- softened
1 Tablespoon brandy or amaretto -- optional

1. In a medium saucepan, combine the cream and corn syrup. Place over medium heat and bring to a boil.
Remove from heat and add the chocolate and butter. Allow to stand for 3-4 minutes, then whisk smooth. Add liqueur and whisk, if using.

2. Scrape the frosting from the pan to a bowl to cool and thicken. To use immediately, stir it over a bowl of ice until cooled and of spreading consistency.
Alternately, refrigerate and bring back to room temperature to spread. (It is not recommended to place in the freezer) Stir to lighten before using.
Thoroughly chill the cake to set the frosting prior to serving.
