Cooking with Karel Anne: Square Zooks

It's the time of year when many holiday parties are "Bring a Dish to Share". You want something that tastes good, AND is easy, right?
Well, you FOUND it -- and it's calorie conscious to boot! [Also great as a dinner side dish]

Square Zooks

4 large eggs -- beaten slightly
1/2 cup onion -- chopped fine
1/2 cup Parmesan cheese
1/2 cup oil and vinegar salad dressing -- (preferably Italian)
2 tablespoons oregano
1 package biscuit mix -- (approx 5.5 ounces) or 2 cups Bisquik
4 cups zucchini -- sliced thin

1. Preheat oven to 350F.

2. Beat eggs in a large bowl. Stir in onion, cheese, dressing and oregano. Add biscuit package and mix thoroughly.
Add the zucchini to the bowl and making sure it is completely covered with the mixture.

3A. If making as a vegetable side dish, pour batter into an 8 x 8 glass vegetable dish.
Sprinkle a little extra parmesan cheese on top and bake for 40 minutes. Top will be golden brown.

3B. If making as an appetizer, spread a thin layer of the mixture on a non-stick cookie sheet.
Spread out the zucchini on the sheet with very little overlap. Sprinkle a little extra parmesan on top and bake for about 25 minutes.
Top will be golden brown. Cut into small squares for serving.
