Habanero Pineapple BBQ Sauce

1/2 cup Diced red onion
1/2 stick unsalted butter
1 tbsp chopped garlic
3 tbsp habanero Pineapple jelly(substitute any pepper jelly you like)
6 oz pineapple nectar or juice
1/2 small can tomato paste
2 tbsp brown sugar
1 tbsp apple cider vinegar
Salt and pepper

In a medium pan over medium high heat, melt butter and sauté onion until soft about 3 to 4 min. Add garlic and let cook for a min then add jelly and lower heat to medium. Once jelly has melted add pineapple nectar, tomato paste, brown sugar, vinegar, and salt and pepper. After everything is mixed in and comes to a simmer, blend sauce it incorporate the onion. Serve with pork, chicken, or shrimp.
