Chef Josh Aaron has come up with yet another great recipe. Make it yourself or come to the Island Bar and Grill this weekend, where it'll be on the menu!
4 3 to 4 oz Pork Loin Chops
1 cup chopped fresh pineapple (core removed)
1/8 cup chopped jalapeno (seeds removed)
1/8 cup diced red onion
1 tbsp chopped cilantro
1/2 tsp cayenne pepper
1/2 tsp chili powder
1 tsp kosher salt
juice of one whole lime
Heat grill to 350-375 and season pork chops with steak seasoning and olive oil. Grill chops 4 to 5 mins on each side. While the chops are cooking, prepare salsa by combining pineapple, jalapenos, onion, cilantro, seasoning and lime juice. Mix together until all the seasoning is
incorporated. Remove pork from grill and spoon salsa over the chops. Serve with rice and grilled vegetables. Serves 2.
