Thanksgiving on a budget-Part 3

A great Thanksgiving with a limited budget is very possible! Today we will show you a sweet potato casserole and a pineapple casserole.

Sweet Potato Casserole
2 pounds fresh sweet potatoes peeled and cut up
1/2 cup maple syrup
1 egg beaten
1/2 cup half-and-half
1/2 teaspoon cinnamon
1/2 cup flour
1/2 cup chopped pecans
1/2 cup brown sugar
1/2 stick butter
Cook potatoes in boiling water until tender. Drain well. Place in mixing bowl and mash with spoon or hand mixer. Add syrup, egg, half-and half and cinnamon. Mix well and pour into 9 x 13 " baking pan.
Mix butter, flour, chopped pecans, and brown sugar with hand mixer or food processor until incorporated. Sprinkle on top of potato mixture. Bake 35-40 min. and 350 degrees.
This can be frozen.

Pineapple Casserole
2 cans drained chunk pineapple
1 cup cheddar cheese
1/2 cup white sugar
1/4 cup flour
Mix together.
1 cup crushed buttery crackers
1/4 cup melted butter
Mix crackers and butter and sprinkle over top of pineapple mixture. Bake 20-30 minutes til crackers crisp up and cheese is bubbly
