Cooking with Angie: Patriotic fruit tart

This dessert is a patriotic fruit tart...simple and pretty...cool and refreshing for the upcoming Memorial Day weekend.

Fresh Berry Tart
1 pre-made graham cracker crust
1 small box lemon instant pudding prepared according to package directions
2 tablespoons raspberry preserves
zest of one orange
Fresh berries: to make it patriotic I chose strawberries and blueberries (hulled and washed)
Fresh mint and whipping cream for garnish
2 tablespoons apricot preserves heated in microwave for 30 seconds
Spread the 2 tablespoons raspberry preserves in the bottom of the pie crust. Zest the orange into the lemon pudding. Gently spread the pudding over the preserves. Arrange fruit on top of pudding. Drizzle with heated apricot preserves. Garnish with whipped cream and mint.
