Simple Brochette

Ingredients

1/2 cup Olive Oil de Fino * Available at Sandy's in Kelly Square

1 loaf of bread sliced in half lengthwise *Potato Rosematy, Pugliese, or Faccia work well

4 TBS, Basil Pesto

6 Roma Tomatoes, diced

1 cup Asiago cheese, grated

Directions

Lay out bread onto a baking sheet and spread pesto on top
of both slices. Top with diced tomatoes and cover with
cheese. Cover tops with Olive Oil de Fino, Yum!
