Roasted Roast Beef



  • 1/2 pound shaved roast beef
  • 4 slices horseradish cheddar cheese
  • 1 medium green pepper, sliced thin
  • 1 medium tomato, sliced about ½” thick
  • 1/4 cup extra virgin olive oil
  • 1 tsp. chopped fresh cilantro
  • gourmet bread **roasted garlic and herb is great with this


  • 1/2 cup garlic ranch
  • 2 TBS. honey Dijon mustard


    In a shallow pan, place sliced peppers and tomatoes. Top with oil and sprinkle with cilantro. Bake at 450 degrees for 10-15 minutes. Slice bread and generously spread with sauce. Pile on roast beef. Top with cheese. Place in 450 degree oven until cheese melts and peppers and tomatoes are done. Top meat and cheese with roasted vegetables. Serve with extra sauce for dipping and fresh carrots or blue mesa chips. YUM!
